This gas grill has a truly unique feature. The top mounted infrared sear burner is modeled after professional salamander broilers that restaurants use to get the perfect steak. Of course most of these professional units have far greater power, while this one is under powered at 10,000 BTUs. Still, a nice feature and certainly capable of giving a while new take on grilled steaks. Loaded with other features, this grill breaks my primary rule, too much for too little. Even at $600USD, quality takes a back set to all the flash and features.

Now, Ted has taken the idea of paring drink with food to a whole new level by hand picking beers that act not only as the perfect accompaniment to grilled foods, but also as an ingredient in the recipes. What makes this, or any of Ted's books standout is how much Ted loves what he does and it shows in how he approaches recipes, cooking, and writing.

This isn't a lightweight cookbook, either. At over 300 pages this is a book that is worth it and not just one of those fluffy little cookbooks that line so many shelves these days. If you are into beer and barbecue I would certainly recommend taking a look at this one.

Now, Ted has taken the idea of paring drink with food to a whole new level by hand picking beers that act not only as the perfect accompaniment to grilled foods, but also as an ingredient in the recipes. What makes this, or any of Ted's books standout is how much Ted loves what he does and it shows in how he approaches recipes, cooking, and writing.

This isn't a lightweight cookbook, either. At over 300 pages this is a book that is worth it and not just one of those fluffy little cookbooks that line so many shelves these days. If you are into beer and barbecue I would certainly recommend taking a look at this one.

New Review HastyBake Legacy 131 Powder Coated Charcoal Grill

Some people manage to get it right the first time. Grant Hastings got it right when he built the first Hasty Bake Grill in 1948. This charcoal grill has changed little in function since then. Basically it is a closed box with a charcoal pan mounted so it can be adjusted close to the cooking grate for high, direct heat, or lowered as much as 14 inches to low temperature cooking. Add the removable heat diffuser and it grills, smokes or bakes indirectly. This makes the Hasty Bake design one of the most versatile on the market. There are many models and this version, the one of the least expensive, starts are around $1,000USD, so this isn't an inexpensive product. However, the quality construction (made in the US) means it will last a very long time.

In 2011, Napoleon reinvented the kettle charcoal grill with a new design for airflow that helps create an even charcoal fire. For 2012, they have taken this grill and mounted it into a metal cart with folding side table, providing workspace and stability. The Consumer Product Safety Commission, Health Canada, and One World Technologies have issued this recall concerning leaking gas regulators on the STOK Island and STOK Quattro Gas Grills. There have been 569 reports of propane leaking from these faulty regulators which can cause an uncontrollable fire underneath the grill. Owners are asked to stop using their grill immediately and Contact One World Technologies at (800) 867-9624 between 8 a.m. through 5 p.m. ET Monday through Friday for a replacement regulator. New Review Smoke Hollow 44Inch Gas Smoker

The biggest limitations of gas smokers is the range of temperatures they can hit and the fact that most of them leak smoke and heat through the doors. The Smoke Hollow 44-inch smoker doesn't have these problems. The doors latch closed tightly and the dual burner design gives it a much wider range of temperatures. It is also a very large smoker, standing 5 feet high with five racks and seven cubic feet of capacity. If there is a problem with this smoker you probably won't see it for a few years. The lightweight burners and thinner metals shorten the life expectancy of this smoker. Care should be taken to keep it in good working order.

Converting a Gas Grill to Lava Rocks

Long ago gas grills used stone to separate the flame from the food. Typically, found in lava rocks in the lower priced grills, this barrier absorbed heat, evening the flame that caused drippings to quickly combust producing smoke that flavored the food. These days, grease is managed by channeling it away from the burners to reduce flare-ups. This action decreases smoke, though some might complain, it eliminates authentic grilled flavor.

New Review Portable Kitchen Cast Aluminum Grill

The best feature of the Portable Kitchen Cooker is its amazing longevity. Stories of people using these grills for more than four decades are common and the current version of this grill is identical to the one that Milton Meigs first invented in 1952. The design is primative, some would say retro, and simple. It is this simplicity that makes it a great grill capable of high temperature grilling and low and slow smoking. The only limitation is the small size. At 301 square inches it is only a little larger than an 18.5 inch Weber Kettle.

Frequently I hear the complaint that cookbooks have become too expensive. There is an answer for that, electronic books. Take for instance this great ebook from Mike Vrobel, author of the blog DadCooksDinner. Mike and I agree that far too few people are taking advantage of the rotisserie potential of their grills and he has authored this book that covers the subject with a great amount of detail. While a printed book might run you $20USD or more, you can get this one for $4.99. A great deal if you consider that Mike gives you more than just 50 recipes, he has filled this book with detailed information on fire building, dry and wet brining, rubs and seasonings, and everything else you need to master the rotisserie.

Recall Alert OGrill Portable Gas Grill

The Consumer Product Safety Commission and Uni-O Industries have announced a recall of 4,530 portable gas grills sold at various retail outlets between November 2008 and December 2010. The regulator on this grill can leak causing fires. There have been 10 fires reported by owners though there have been no injuries. If you own one of these grills, you are asked to stop using the product and contact the manufacturer at (888) 847-8968 between 7 a.m. and 6 p.m. CT for a free replacement grill. New Review Camp Chef Smoke Vault 18

One of the problems with gas smokers is that the heat output can be limited by a factory who thinks they know best. While smoking is done in a specific temperature range, it should be up to the user if they want to "flash" smoke or do a low temperature smoke. This Camp Chef smoker has a temperature range from 150 to 500 degrees F so it is much more versatile than many gas smokers on the market. However, like many most box style gas smokers, the body isn't insulated and though the door on this one fits better, you still get smoke leakage.

First Look Napoleon Charcoal Kettle Grill Cart

Recently Napoleon added a charcoal grill to their product line, predominately made up of gas grills. This charcoal grill looked familiar. A 22 1/2-inch kettle style grill, the Napoleon unit was billed as an improved version of the iconic Weber Kettle. With an adjustable height cooking grate, pull out ash catcher, and unique air baffle to even the heat, this really is a good charcoal grill. Of course, at around $200USD typically, it was also much more expensive.

For 2012 Napoleon has taken this grill one step further by adding several attractive features and putting the grill in a cart configuration. Of course, this makes it much more like the Weber Performer that has been available for many, many years. But consider this. The Napoleon version has a 20-pound porcelain coated, hinged cooking grate that can be placed at three different heights. The cart has a fold down table reducing the footprint to little more than the 22 1/2-inch diameter of the grill itself. The lid on this version is hinged and angled so you can easily lift it out of the way without having the reach over the fire. The grill itself can be turned 360 degrees inside the cart so you can get to any part of the grill, again, without reaching over the fire.

First Look Stubbs Chipotle Butter Injectable Marinade

If you've been reading my site for a while you have probably noticed that I am not a big fan of commercial barbecue sauces. What I am a fan of is the use of injection marinades. This is the perfect way to get flavor and tenderization deep into meats. What I hear most from people isn't whether to do it but how. The truth is, it is easy. Get a good marinade, load it up in a syringe, and start pumping it into the meat everywhere. The only secret is to use small amounts in lots of places.

I tell people this and still they don't try it and for this there is not excuse other than laziness. Fortunately, you can pick up everything you need in a single package these days, both syringe and marinade. For instance, this kit from Stubb's is a Chipotle and butter flavored, thin and vinegary marinade that comes with the syringe. The flavor of this marinade is very good and you don't have an excuse not to try it. I suggest giving it a try with a chicken so you are not investing a lot and you can get the practice that will allow mastery of meat injection.

Stubb's sauces and marinades are, in my book, on the better side of the commercial products out there. They do not contain loads of strange chemicals, are certified gluten free, and come from a real heritage of barbecue so you can't really go wrong (unless you inject everything into one spot).

Of course there was the Bubba Keg, which was made out of steel instead of ceramic and in quick order changed into the Big Steel Keg, and then the Broil King Steel Keg. The thing is, most of these grills listed for prices in a pretty narrow range around the $700USD price point. Now the people at Char-Griller have shattered the price barrier and offered up this metal Kamado grill for $300USD.

So, what exactly is this? The Char-Griller Akorn has a larger grilling space than the large Big Green Egg and many of the same features of the Broil King Steel Keg. Actually, some of the parts are uncomfortably similar to the Steel Keg, in the way that lawyers would probably drool over. However, this is a competent grill/smoker for a ridiculously accessible price and bound to be a big seller.

First Look Downtown Grill by Thermoceramix

Thermoceramix is the next generation of heating element. In fact it isn't even an element. This spray on material creates heat under current making it possible to create heating surfaces of virtually any shape or size. Imagine, for instance, that instead of having a water heater, you have a length of pipe treated with Thermoceramix that heats water on demand anywhere you need it.

Thermoceramix was invented in 1997 but is only now becoming a viable product through demonstration of its abilities in several categories. The Downtown Grill is such a demonstration. This 32 pound portable electric grill can reach a cooking surface temperature of 700 degrees F. with the lid open.
